I agree. Pigs are very tasty animals.
I have made a similar dish with meatloaf, except you use bacon and it gets rolled up on the inside.

Ever have a deli-club sandwich? You get your turkey, you get your ham, your bacon, your roast beef, and some Italian salami, with lettuce, tomato, mayo, and provolone.... I mean, it's like an animal holocaust on two slices of bread! They get their revenge when a massive heart attack takes you out in your mid to late forties, but in the mean time.... MMMMMMMM!!!!!!

Naw mate, naw... Always substitute out another type of meat for that extra slice. Capicola is just as structurally sound as bread, and wheat doesn't have a family.

Well, I'll tell you all what. Next Saturday, I am going to make Barbecued Bacon & Beans in the crock pot, which will be my dinner for most of next week.
2 large cans fo beans
4 or 5 pounds of bacon'
1 bottle of Open Pit barbecue Sauce.
Crock pot on high for 8 to 12 hours.

here's mine....good stuff
4 Boneless chicken breast -
pound chicken breast flat
squeeze Lemon juice on chicken
3 green onion
3/4 bell pepper
2 clove garlic
lemon zest.
Put vegetables in food processor with 1 Tbsp olive oil and chop, spread on chicken and add lemon zest, salt and pepper.
roll chicken up like a pastry roll and tie with string.
coat chicken with olive oil
fry chicken on all sides in a pan to crisp (may require more olive oil)
coat oven safe dish with olive oil, place chicken in dish and bake at 350o for 30-45min in pan until fully cooked
Serve with cooked carrots and lemon sauce
lemon sauce
1 cup chicken broth
1/2 cup fresh lemon juice
1/2 cup sugar
1 lemon, zest of
1/4 cup cornstarch
1/4 cup cold water
#1 In saucepan bring chicken stock to a boil and then add lemon juice, sugar and zest.
#2 Return mixture to a boil.
#3 Blend together cornstarch and cold water and stir into the lemon sauce.
#4 Cook until thickened, stirring frequently and adjust seasoning to taste.

Too much work for a weeknight, but it does sound tasty.
3 weeks ago we tried a lemon sauce recipe that called for putting wedges of lemon into the final reduction and my face is still puckered. Waaaaay too much lemon.

One of the great pleasures in life is to cook, and modifying recipes is always an adventure.

I love lemon in fresh preparations, or even straight up (I always eat the lemon slice out of my water in restaurants), but other than on salmon I'm not a big fan of lemon hot or cooked. I've tried it paired with chicken several different ways, and I just can't seem to get into it. I also don't like it in pastries. Nothing quite ruins a cheese danish like lemon...
